I think we have already established that I am a biiigggg pie fan. I have no shame in my dessert game, and that’s why I was not playing around when I finally made this pecan pie recipe that I have been dreaming about for a while.
Pecan pie with a chocolate chip cookie crust. WHAT!
I love me some pecan pie with a scoop of vanilla ice cream, but since cutting out dairy and gluten I needed to find a way to still enjoy my fav dessert while keeping processed sugars low and steering clear of certain ingredients.
You will not find gluten, dairy, or corn syrup in this recipe, and yet it is still just as yummy as your typical pecan pie that you would find at any family gathering!
For the crust, you can use pre-made chocolate chip cookie dough, or make your fav chocolate chip cookie recipe and roll it out into a dough. I personally used Sweet Loren’s cookie dough, and it turned out wonderful! Up next is figuring out a homemade chocolate chip cookie recipe to go with it.
This recipe got my husband’s stamp of approval, and he is a tough dessert critic.
Here is what you will need to make this pecan pie with a chocolate chip crust:
Pecan Filling
- 1 1/2 cups of chopped pecans
- 1 cup maple syrup
- 3 eggs
- 1 cup coconut sugar
- 2 tbsp melted ghee (you can use butter if you aren’t dairy-free)
- 1 tsp pure vanilla extract
Chocolate Chip Cookie Crust
- 1-2 packages of frozen chocolate chip cookies (I used Sweet Loren’s chocolate chunk cookies). I used one and ate a bit so it didn’t go all the way to the top, next time I’ll grab two and make the leftover into cookies.
OR
- 1 batch of homemade chocolate chip cookie dough
Supplies
- Mixing Bowls
- Pie Plate
Here’s what you need to do to make your very own pecan pie with a chocolate chip cookie crust:
- Preheat oven to 375*
- Spray your pie plate with coconut oil or use ghee/butter to prevent crust from sticking to plate.
- Roll all cookie dough pieces (or dough) into a single, flattened crust and form it to the pie plate. Poke holes in the bottom with a fork.
- To make the filling, combine all ingredients and pour into the pie plate.
- Once pie is all put together, place in oven and bake for 60-70 minutes. Cover with foil halfway through so crust doesn’t burn.
- Wait to eat until completely cool π
