There’s nothing better than a slice of warm apple pie on a cool afternoon!
I’m a big pie fan and live for the holiday meals that finish off with a nice big slice of apple/pumpkin/pecan pie and a dollop of cool whip or scoop of ice cream. I’m drooling right now as I’m thinking about it- SO. GOOD.
Now that I have eliminated gluten and dairy in my diet, and the holidays are right around the corner, I have been trying to figure out how I can have my beloved desserts without all of the *extra* stuff.
I was playing around in the kitchen one day, and was thinking about an apple crisp…and then it came to me…
Apple Pie WITH A GRANOLA CRUST!
I hunted around for a recipe that sounded like it would work with what I needed to change and substitute, but I couldn’t find anything so I grabbed everything I thought I needed and just started making…
Let me just tell you, when it came out of the oven I was SHOCKED. I really had no expectations because I didn’t want to be disappointed, but now I am hyping this sucker UP because it is that good! It has a standard apple pie filling, but the crust is made with my favorite granola recipe!
My husband enjoyed it with a scoop of vanilla ice cream and I ate mine with So Delicious CoCo Whip. You can always eat it by itself if you would rather do that. Either way, you NEED to try it.
Here’s what you will need to make this Gluten and Dairy Free Apple Pie with a Granola Crust…
Apple Pie Filling Ingredients:
- 1/2 Cup Coconut Sugar
- 1/2 Cup Brown Sugar or Substitute
- 3 tbsp Gluten Free Flour
- 1 tsp Ground Ceylon Cinnamon
- 1/4 tsp Ground Cardamom or Ground Ginger
- 1/4 tsp Ground Nutmeg
- 6 cups of sliced apples (5-6 small-ish apples)
- 1 tbsp Lemon Juice
Granola Crust Ingredients:
- 3 Cups Gluten Free Oats
- 1/4 Cup Ghee
- 1 1/4 tsp Baking Soda
- 3/4 Cup Coconut Sugar
- 3/4 Cup Brown Sugar or Brown Sugar Substitute
- 2 Eggs
- 1/2 Cup Chia Seeds
- 1 Tsp Pure Vanilla Extract
- 1 Cup Almond or Peanut Butter
Supplies:
- Pie Plate
- Mixing Bowls
- Foil
Here’s how to make your own Gluten and Dairy Free Apple Pie with Granola Crust…
*Make the apple filling FIRST!
- Core apple and slice as thin as you like.
- Combine sugars, flour, spices, and lemon juice in a bowl and toss apple slices in mix. They should be covered completely in spice mixture.
- Set aside.
*Make the granola crust next!
- Combine all ingredients and mix by hand. Your mixture should be sticky enough to hold together.
- Line pie plate with granola crust. Make sure there is a little leftover to sprinkle on top.
- Fill with apple mixture.
- Place pats of ghee on top of apple mixture and sprinkle leftover granola on top.
- Bake at 375* for 30-35 minutes. Cover with foil halfway through so the granola doesn’t get too dark/hard.
- Allow to cool and enjoy with vanilla ice cream or whipped cream!
